oh, these photos make my mouth water. we've never went vegan for more than a few days, and i know it would be quite a stretch for us too (especially for me, planning-wise!) as we do eat a lot of dairy products, espedcially in meals for which i skip meat/fish/chicken... i'm off to check out some of the links you shared, have a lovely day!

You are a brave soul! I'm gluten and lactose intolerant...I find that hard enough to figure out so going vegan on top of that could really throw me. You should be really proud of your accomplishment with trying this diet. Keep up the good work. My change hasn't diminished my desire for mom's chicken-n-dumplings, cakes, pies, etc. but we'll get there, right?? The photos look luscious. Hugs...

Ellen, I do know how hard it is and I think you are doing a wonder job! I have been a vegetarian for many years, but the rest of my family is not so I usually end up preparing two different proteins each night [which can really be a pain in my neck sometimes :)] I have been off dairy for the last week and am really noticing how much better I feel so now I'm wondering if this may be something I keep up?

I guess it is too late now for dandelion but that crown can be made with many different flowers.

Oh wow, vegan for a month? We would have hundreds of eggs:) I could go vegetarian of a month easy, but I love a bit of milk in my coffee. (okay, it's cream...)

(Sorry I've been a bad commenter - it's wedding season, so I'm working a lot right now...)

That's interesting, because I'm the opposite. I'm really good at planning for vegan main meals, but lunch as been my nemesis. It's too easy to fall back on cheese for lunch and snacks, because I don't plan for those times.
