Since my daughter remarked today that my blog seems to be taking on the characteristics of a baking blog, I thought it appropriate to not disappoint. (Plus it's the one of few things I can seem to muster up right now.) So I thought combining chocolate & raspberry sounded good. I also had a frozen box of refrigerated pie crust that needed to be moved out so that other items could enjoy the freezer space.
After scouring the internet for recipes using prepared pie crust mix, I found this. I doubled the recipe & tweaked a few things. Isn't this orange pattern beautiful...it would make such an interesting print design!
I used mini chocolate chips & raspberry jam instead of the orange marmalade. (didn't have to heat up the jam like the recipe suggested) It also said to place the pie crust on a work surface, but I saved time & a mess by simply putting it directly onto the parchment then carefully snipped it into wedges without cutting through the parchment.
The recipe's directions were a tad confusing when rolling up the wedges. It should be rather straight-forward: roll from the outside edge to the point in the middle. After a few brushes with an egg wash, they were ready for the oven. Note to self: make another recipe alongside this one so the remainder of the egg-wash doesn't get wasted.
And I had to bake it longer than it recommended...but they're good. Not too sweet. Almost like the real thing. In fact they were too good that I sent them off with my children & husband tonight...away to the youth group meeting.
